Chapter 7 - The Sweetest Business

In the months that followed our move, I found myself spending more time in our new, bright kitchen.
Baking had always been a quiet hobby of mine—a therapeutic outlet during stressful times. But now, without the shadow of my family hanging over me, my passion for baking blossomed into something extraordinary.
I began experimenting with custom cake recipes, focusing on intricate, artful designs and unique flavor combinations. My specialty, born from a place of resilience and love, became a signature recipe: a light, coconut-infused sponge cake layered with fresh, caramelized pineapple compote and wrapped in silky vanilla buttercream.
I called it The Phoenix Pineapple Cake.
Ellie loved helping me in the kitchen. She wore a tiny flour-dusted apron and took her job as "chief flavor taster" with absolute seriousness.
"Mommy, this is the best cake in the whole wide world," she announced one afternoon, wiping a smudge of buttercream from her nose.
Mark snapped a photo of us laughing together at the flour-covered kitchen island. He posted it on his social media page with a simple caption: When life gives you pineapple trash, make a masterpiece.
The photo went viral in our local community group.
People who remembered the viral story reached out, asking if I was taking orders for birthday parties, weddings, and celebrations. What started as a simple home hobby quickly turned into a flood of requests.
Within six months, I took a leap of faith. I resigned from my corporate job and opened a boutique bakery in the heart of our new coastal town. I named it Pineapple & Joy Bakery.
On opening day, a queue of townspeople stretched down the block.
Sarah and her husband were first in line. Local families, neighbors, and strangers who had followed my journey came out to support us. The bakery was filled with the warm, rich scents of toasted coconut, melted chocolate, and fresh vanilla. In the display case sat three dozen mini tropical pineapple cakes, glowing like little beacons of triumph under the warm bakery lights.
